Most Colorful And Healthy Oriental Chickpea Salad Ever

Let’s make a simple and healthy salad using chickpeas, which I always love. In particular, among those who prefer healthy food in recent years, chickpeas have been used as food items in various forms.

It can be used to make most popular hummus, falafel, vegetarian burger patties as a main dish or salad, meat stews, couscous etc as a side ingredient in so many different variations.


Today I’m going to introduce you to my personal favorite, healthy, colorful salad with chickpeas that gives it an oriental taste and aroma.

I prepare the chickpeas soaked and boiled to get about a cup of crispy state for 3 portion meals. Since it is a salad, any type of vegetables we fancy are perfectly fine.

Vegetables that I use often are red cabbage, cucumbers, tomatoes, and capers marinated in vinegar.

The sweetness can be replaced with raisins and crunchy apples. If you don’t have raisins or apples, you can use honey instead.

And I add about half a tablespoon of dried thyme herbs to give the salad a luxurious and fragrant flavor that is both exotic and stimulating to the nose.

The dressing must be made with apple cider vinegar or rice vinegar and 100% sesame oil.

As already mentioned, for an oriental taste and aroma, it is important to use good quality, pure 100% sesame oil and apple cider vinegar instead of the olive oil and balsamic vinegar commonly used in Western salad dressings.

Then, add a pinch of salt and mix evenly so that all ingredients are well coated with sesame oil and vinegar.

Then sprinkle cashew nuts and sesame seeds as a garnish.

Mixing cashews with other vegetables in sesame oil and vinegar will lose their crunchy texture the next time you eat them. So, do not add cashew nuts in advance, and always sprinkle with sesame seeds as a garnish when eating.

Sometimes I like to eat this salad in a different way.

So, I lightly reheat my delicious Arabic homemade bread without oil in the pan. Then, topped with whole grain mustard, topped with a chickpea salad and rolled up for a hearty meal.

One cup of Chickpeas
One cup red cabbage
Half a cup of Cucumbers
Two Tomatoes
A spoonful of pickled capers
Two tablespoons of 100% pure sesame oil
Two tablespoons of Apple cider vinegar(or Rice vinegar)
A pinch of Sesame seeds
50 grams of cashew nuts
A pinch of Thyme
A pinch of salt
