Korean Style Healthy And Chewy Rolled Oats Carrot Tteok Cake

As a Korean who loves chewy texture, I can’t help but fall in love with Korean traditional glutinous rice cakes or pies(? Tteok, mochi) that are chewy, savory, and not too sweet. I still vividly remember the happiest time I went to a traditional Korean market with my mum and bought all kinds of Korean Tteok rice cakes. At that time, I could just ignore the fact that rice cakes are high-calorie carbohydrates and enjoy them all on the spot.

However, even if I like the chewy texture, I don’t fancy the texture of the chewy sponge dessert made with marshmallows, which are often used in Western-style desserts.

Also, speaking of calories, it raises doubts about whether there are desserts that are not high-calorie at all, regardless of whether they are in the East or the West. This is because most of the high-calorie desserts are made by adding all kinds of cream, a huge amount of sugar and oil, in addition to wheat flour and rice flour, which are the main ingredients.

Likewise, most tteok or mochi cakes are high-calorie snacks and can be a meal replacement. So, it is difficult to eat a lot as a snack and it will not be good for our health in the end. That’s why I’m sharing the recipe in a version that could be a healthy snack.

So, in this post, I introduce a very simple and easy low-calorie snack version. And, inspired by Korean rice cakes (?, Tteok, rice cakes), it is a lovely dessert that is chewy, delicious, and nutritious. Just so healthy!

All you need is glutinous rice flour(????), the ingredient that goes into all kinds of rice cakes as always.

And the second important ingredient is rolled oats, not wheat flour. And to give nutrients of minerals and vitamins, I grate fresh carrots, one of my favorite vegetables. Then prepare eggs and milk.

For the rest, you can add raisins, nuts, or seeds as an option. One thing to keep in mind is that the mixing ratio of the above ingredients is very important. This is because it is necessary to create the chewy texture of the tteok cake.

One more thing, I usually use oats a lot, which I use to make a variety of biscuits, muffins, cookies or bread. So, I use Online Shopee, a Malaysian e-commerce app, to buy large quantities of oats in bulk when prices are low. Usually the lowest price is only RM8 per kg (US$1.8), so this time I ordered 2 packs of 2 kg total.

<Ingredients>

2 cups of rolled oats

1 cup of glutinous rice flour

half a cup of grated carrot

1 cup of milk

3 eggs

half a cup of raisin and sunflower seeds

1 tablespoon of cinnamon powder

a pinch of salt

In a mixing bowl, mix all the above ingredients well. Then put it in the refrigerator for about 30 minutes to set. Then, pour the mixed batter into a wide oven tray to a thickness of 1.5 cm ~ 2 cm. And then, tap the oven tray on the kitchen shelf two or three times to spread the mixture evenly and flatter. Then put it in a preheated oven and bake at about 180 degrees for 30 minutes.

Look at this beautifully golden brown baked surface! Jumbo-sized black raisins and orange carrots peeking through the delicious golden brown catch my eye, while the fragrant cinnamon makes me want to eat it right away. I waited a little longer and let it cool at room temperature for about 10 minutes.

The rolled oats are evenly embedded in the surface and inside of the tteok pie, so the texture of the tteok pie is not boring and it creates an organic and very healthy visual.

Divide it into 7 horizontally and 5 vertically. So I cut it with a bread knife to get a total of 35 pieces. When I pick one and I can feel the softness of the tteok pie under my fingers. Despite no sugar added, the black raisins give it a slightly sweet taste, and the rolled oats give it a much more savory and light taste. As expected, the texture made from glutinous rice is very chewy and soft. I enjoyed all 3 pieces on the spot.??????

This is my honest self verdict! ? “If rice cakes are on the dessert menu of a Western restaurant, I wouldn’t choose the typical Western desserts like Black Forest Cake, Crème Brulee, Tiramisu, Cheesecake, and whatever sugary ice Cream.” ????

In a nutshell, traditional rice cakes (tteok pie) are ultra-dense, high-calorie snacks loaded with carbohydrates. I still like it, but…???? Now there is an easy and healthy version according to my recipe here, so what’s the problem! ????
