Sweet Cinnamon flavored Nuts Filled Crunchy Cookies

I thaw about 400 grams of whole wheat flour dough out of the freezer. I already made the dough myself and kept it for a few weeks. Today, I’m going to make my favorite snack, super crunchy biscuits or cookies.

It will be made in two flavors, the first is a sweet cookie with a very fragrant cinnamon and nutty flavor, and the other is a salty and umami flavor with cheddar cheese.

I take the 400 grams whole wheat flour dough I made about two weeks ago out of the freezer. Thaw the dough at room temperature for about an hour and a half.

I divide 400 grams of dough into 200 grams each. Then I again divide the 200 grams into exactly 8 pieces of 25 grams each.

Thus, a total of 16 pieces are prepared. Lightly sprinkle flour on the soft whole wheat dough and knead it gently to shape and cut it. The earthy smell and buttery smell is so good.

For sweet fillings, prepare about one cup of sunflower seeds, pumpkin seeds, raisins, and roasted chickpeas. Sprinkle a spoonful of cinnamon powder, add about 2 spoons of brown sugar, and mix evenly.
As for the savory filling, I only need one thing. Cut the cheddar cheese, which is moderately hard and mature, into square cubes and cut them into half the size of a ping-pong ball, and prepare a total of 8.

I roll out a total of 16 mini-size dough into a thin layer with a rolling pin. Form one at a time and place it on the palm of my hand. Place a spoonful of filling mixed with nuts and cinnamon powder right in the middle of the dough. After forming a nice, sturdy round shape, place them one by one on the oven tray. Similarly, place the cheddar cheese cubes on top of the 8 thin dough, then form into a round shape and place on the oven tray.

Next, beat the eggs and brush the egg wash over the each of them. And then, sprinkle a generous amount of toasted sesame seeds with a teaspoon over the already delicious looking cookies.

Leave these pretty ones at room temperature for about 20 minutes while preheating the oven. When the oven is preheated, place the tray and bake at 180 degrees for 25 minutes.

While the cookies are being baked in the oven, the delicious smell from the oven fills the whole house, not just the kitchen. Especially, the sweet and fragrant cinnamon scent keeps tickling the nose pleasantly.

After the oven turns off after about 25 minutes, leave it in there for about 15 minutes more. Then take out the oven tray and let it cool slightly to room temperature. All of the cookies that are baked to a brownish color look so appetizing. In particular, thanks to the sesame seeds, it is so luxurious and coveted that I cannot take my eyes off it.

I wonder which one to eat first. In the end, I decide to eat the sweet cookie first, and then the salty cookie later.


For both types, the texture of the crispy whole wheat dough excites me to the point that I can’t stand it any longer waiting . When it is cut in half, it is crunchy, so I can eat it over and over again because of the chewy taste like the texture of crispy cookies sold in the market.

So I easily smashed 3 sweet cookies with nuts and cinnamon fillings at a time.

Look how many nuts are in the filling! The dough is really thin, so it’s really crispy and chewy. Actually, my mouth is full of savory taste and cinnamon flavor rather than sweet taste. So I could eat three so easily, instead of one with my home brewed coffee.

The filling with cheddar cheese is also moderately salty and delicious. In particular, I cut up more cheddar cheese and put it on the cookies, and it was really delicious.

As expected, it’s really delicious when I spread some fig jam I have at home and enjoy it with cheddar cookies.
