Super Healthy And Easy Semolina Basbousa Recipe Ever!

I usually buy various spices, cheap atta chapati flour, chickpea flour, semolina flour, etc. at Brickfield near Kuala Lumpur Central Station,

where Indian shops are lined up, and store them in the refrigerator for several months when they are all consumed.

As a fit foodie, I love to make delicious and easy dessert at home whenever I have time.

So, let’s make using a few ingredients what I have at home. I got my dessert idea today inspired by basbousa, which is eaten as a dessert in an Arab restaurant. I make it using semolina as the main ingredient, atta flour, dried coconut, butter, milk, sugar, lemon, honey, and about 4 nuts and seeds to use as toppings.

Aside from the typical diamond basbousa shape, my semolina desserts don’t taste and texture the same at all. Instead, it has a very nutty, soft and moist taste with a lemon scent added to it, giving it a really refreshing hint.

The texture is soft on the inside and moderately crispy on the outside, so it’s really delicious.

The biggest point is that the coarse grains of semolina remain as they are, so they are soft, but the chewy taste is really good.

First, mix all the dry ingredients together. Mix 400 grams of semolina, 50 grams of Atta flour, 50 grams of sugar, and 50 grams of coconut powder, add a pinch of salt and a pinch of cinnamon powder and mix well.

Then melt 200 grams of butter in a saucepan over low heat and let it cool. Pour about 300ml of milk and half a cup of squeezed lemon juice into the mixed dry ingredients. Then add the cooled butter and mix well. The texture of the mix should not flow too much. It is good if it is lumpy and has a thick texture. If it is too dry, you will need to adjust the texture by adding milk little by little.

After setting in the refrigerator for about 30 minutes, take out, scoop out the mixture with a spoon on a 45cm * 30cm oven tray lined with parchment paper, and spread evenly to a height of about 1 cm.

To add more lemon citrus flavor to the mixture, I sprinkled lemon skin with a grater, and at a glance, the color added by the lemon skin is really pretty. Then, with a sharp knife, cut the line at the longest diagonal.

Then, considering the diamond-sized dessert you want, make long lines one after the other from the middle line to both edges. Then cross again in the other direction to make a diamond.

After that, I put the four nuts I already have at home in a row. The four nuts I prepared for making Pam’s Basbousa are cashews, almonds, walnuts and pumpkin seeds.

Unfortunately there is no pistachio that day. After filling all the nuts one after another, it is so beautiful that I really want to eat it as it is.

While taking pictures, holding my heart tight, I put them in the preheated oven. Since it is 1 cm thick, it does not bake for long. So, fortunately, the wait for the tasting is not tediously long. That is, bake in the oven at 180 degrees for about 20 to 25 minutes.

After baking for about 25 minutes, I turned off the oven and left it on for about 10 minutes more. After taking it out and cooling it, first drizzle the prepared 100% pure honey between the diamond-shaped lines.

Then drizzle evenly over the semolina basbousa so that all surfaces are coated with honey. So, thanks to the honey, the surface of all basbousa is become sticky.

To make it easier, hold the tray with both hands and move it up and down to make the honey flow over the basbousa surface. So all the surfaces are properly coated, it’s very light-reflective, and it’s shiny and it’s so appetizing.

The really good thing about basbousa drizzled with a lot of honey is that the crispy surface of the basbousa becomes somewhat softer, and the honey flows into it, so the taste on the inside is moderately sweet, and it is really soft and moist.
